Ingredients:
- 14 oz (400g) firm tofu, drained and cubed
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 3 green onions, sliced (separate white and green parts)
- For the Peanut Sauce:
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp brown sugar
- 1/4 tsp red pepper flakes
- 3-4 tbsp water
Instructions:
- In a small bowl, whisk together all the ingredients for the peanut sauce until well combined. Set aside.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the cubed tofu and stir-fry for 2-3 minutes until lightly browned. Remove from the pan and set aside.
- In the same pan, add the bell pepper, broccoli, mushrooms, garlic, ginger, and white parts of the green onions. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
- Return the tofu to the pan and pour in the peanut sauce. Toss everything together to coat evenly.
- Garnish with the green parts of the green onions and serve hot over steamed rice or noodles.
