  • 3 green onions, sliced (separate white and green parts)

  • 1 tsp brown sugar
  • 1/4 tsp red pepper flakes

Instructions:

  1. In a small bowl, whisk together all the ingredients for the peanut sauce until well combined. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over high heat.
  3. Add the cubed tofu and stir-fry for 2-3 minutes until lightly browned. Remove from the pan and set aside.
  4. In the same pan, add the bell pepper, broccoli, mushrooms, garlic, ginger, and white parts of the green onions. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  5. Return the tofu to the pan and pour in the peanut sauce. Toss everything together to coat evenly.
