Ingredients:
- 3/4 cup (90g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs, at room temperature
- 2/3 cup (135g) granulated sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried lavender buds
- 8 tablespoons (113g) unsalted butter, melted and cooled
Instructions:
1. Preheat your oven to 375°F (190°C). Grease and flour a Madeleine pan, or use non-stick cooking spray.
2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, beat the eggs and sugar together with an electric mixer until light and fluffy, about 5 minutes. Beat in the vanilla extract, lemon zest, lemon juice, and lavender buds.
4. Fold the dry ingredients into the egg mixture, alternating with the melted butter, until just combined.
5. Spoon the batter into the prepared Madeleine pan, filling each shell about three-quarters full.
6. Bake for 10-12 minutes, or until the Madeleines are golden brown around the edges and a toothpick inserted in the center comes out clean.
